Pimento Cheese


We all have a super power inside of us whether we are aware of it or not. Mine is recipes with cheese and more specifically pimento cheese. I believe I had it for the first time just a few years ago, and I became obsessed with making it the best pimento cheese ever. Here it is. The recipe for the best damn pimento cheese ever.

The Best Damn Pimento Cheese Ever

16 oz Sharp Cheddar Cheese, finely grated
1 c Mayo (real mayo don’t even think about that other shit which will not be named here)
1 4 oz Jar chopped pimento
1/2 tsp Onion microplaned
1 Clove garlic microplaned
1/2 tsp Cayenne
1/2 tsp Red pepper flakes
1/4 tsp Celery salt
1.2 tsp Salt and pepper

Mix up all ingredients and refrigerate.


Some people put their pimento cheese on celery and you are certainly welcome to do that. Personally, I prefer pita chips, but if I’m feeling real funky I go with a pimento grilled cheese with bacon. Heavenly. Try spreading mayo on the bread and cooking it mayo side to the skillet instead of butter. Nice tang and extra artery clogging.
