The sauerkraut is a huge success, if you like sauerkraut that is. If you don’t like it then you would think it’s exactly what you don’t like. Lucky for me, I love it and I will never eat canned sauerkraut ever again! This has great kraut flavor but with a crunch that canned kraut doesn’t have.
I thought the sauerkraut deserved something a little more special than being thrown on a hotdog. I am pretty sure I have only ever had a reuben one time and even then I don’t think it was a true reuben.
Corned beef is some special stuff and hard to find! I bought a small pack of it for $8.99! That stuff is like gold! Maybe I’ll have to making that next. According to Alton it takes a mere 243 hours and 20 minutes to make.
This afternoon I took a yoga class in Scottsdale Ranch Park offered by IndieYoga. It was exactly what I needed. Autumn taught a really wonderful class. Well paced, good options for all levels there, and just perfect really. They offer every Wednesday and Friday at noon. I can’t wait to go again on Friday.
2 slices rye bread
2 slices aged swiss cheese
2 slices corned beef
Thousand island dressing
Mayo for the bread
I use mayo instead of butter for grilled cheese. Do you do this? Have you heard of this? I told my friend about it and her response was “sounds like something white people do”. I can’t really argue with that, but it does crisp up the bread nicely and adds just a little tang to the sandwich. Try it!
For your sandwich put the cheese next to the bread, then your corned beef, next your kraut and drizzle with the dressing. Grill it up and enjoy!
