pear ginger cocktail

Costco is turning into quite the (expensive) inspiration for me. I stopped there last week for Toilet paper and coffee, and $100 later I have toilet paper, coffee, giant bottle of gin, and a giant bag of pears. Please tell me you do this too. The pears have been a yummy breakfast treat, but there really are more than we should ever have in this house, so I decided a pear cocktail needed to be created.

So then this happened….

1 part Gin
1 part Ginger pear simple syrup
1 part Lemon juice (this is probably a lot. I like things on the tart side)
Topped with ginger beer

It totally tastes like a Summer drink. Light with great depth of flavor. Mix one up! Put your feet up! Summer is on its way!

For the simple syrup:

1 1/2 c water
1 pear chopped
1 in. piece ginger chopped
1 tsp peppercorns
1 c sugar

Put all of this in a small sauce pan on low heat and let it go until it boils. Take it off the heat and let sit of about 30 minutes. Strain and store in the fridge.
