This little simple salad is pretty much rocking my world right now. It’s incredibly easy but also incredibly versatile. The possibilities of what I can do to this thing are endless!
1 can chickpeas (drained and rinsed)
1 clove garlic (microplane or crush and chop)
1 lemon juiced
2 Tbsp chopped Thai basil
2 Tbsp chopped Italian parsley
Dash of olive oil
LOTS of parmesan
Mix it all up in a bowl and devour!
So the variations seem endless here, and I love recipes that have that ability. A really good base that sets you up for more awesomeness. I’m going to try some chopped cucumber, tomato, and mozzarella, or how about some feta and kalamata olives instead, maybe I’m feeling a little more exotic with some curry powder? I might try a little mayo and sriracha if I’m feeling fancy.
