Breakfast of champions



I am loving this breakfast tip I learned from a yogi friend of mine recently. She is way super healthier with her bowl of goodness. I’m still weaning off of crap so I’m giving myself room to breath.

Mornings are sometimes a little hectic around here. There was a time when I would wake up at 5am just to be alone before the kid chaos started. These days I’m a little more chill. Sleep until 6, snooze until 6:15, up with a cuppa coffee until 7:00, change and take the kid to school.

Once I’m back home I pop this yummy treat into the oven and make my to do list for the day. It’s pretty laid back at the moment as I am currently not working a regular 40 hour job. With any luck, I’ll maintain this schedule as my freelance work starts to pick up, or I get a 40 hour job. Whichever comes first. If you want to hire me, you can find my work here.

Breakfast of Champs

1 apple or pear (cored and chopped into cubes)
1/4 – 1/2 c oats (adjust according to the size of your fruit and your taste)
1-2 Tbsp butter (cut into cubes. Again fruit size matters!)
1 Tbsp brown sugar (I’m trying to go light on this)

Mix this all together in an oven safe bowl and bake at 350º F for 20 minutes or until your fruit is soft.

You can add healthier options as well. Skip the butter and sugar and drizzle with agave or honey. Sprinkle chia seeds on the mess before cooking. Add some almonds or cashews. Really the possibilities are endless.

    1. Thanks! You know, I tried it with apple last week and pear this week. Thought the pear was far superior! What I love about the butter and sugar is that it gives it a little hint of dessert. So good!
