#22 Sauerkraut is cooking or soaking or whatever it’s doing

IMG_4940Started #22 on the list! It feels good to start knocking some of that 101 in 1001 list out!

IMG_4959I am loving that this list is forcing me to set goals. Real goals, put on the calendar, making them happen. I know I have only done two, but hey, I have already done two!

IMG_4971It seems that when I made my list I was weirdly focused on German food. Pretzels, sauerkraut, I think I even have spatzle on there. Is it possible to go back and edit the list? I’d like to try other things. Maybe I should create a food 101 list? Too much? Fine, I’ll work my way through this one and see where I end up.

IMG_4965Sauerkraut is really easy to make! The first half of it anyway. It’s percolating as I type. Getting funky. Time will tell if I did it right.

IMG_4968Chop up a head of cabbage.
Toss with a tablespoon of salt.
Press it all down tight in a jar (really squish it in there good. After an hour or two there will be liquid and it all should be submerged under that)
Weight the jar down and cover with a paper towel (I used an outer cabbage leaf to spread out over the cabbage then put the jar on that).
Let sit for a week but from what I read the longer the better.

We’ll know next week if it is edible, but I’m counting #22 DONE since it’s made. Not tested, but made.


The last picture is day two and it’s starting to smell krauty!
