Taking a break from moving and Phoenix talk to share a recipe I came up with last week.
This one is coming not at the height of zucchini madness, which hits next summer. I was just thinking, why blog about something when everyone is blogging about it. Mix it up, I say.
Really, this is more about me having a zucchini that I needed to use up and wanting to make an old favorite, but it turned out to be a new favorite.
1 large Zucchini shredded
1 small onion (really small) chopped
2 cloves garlic (run through a microplane)
1/2 c. Panko Crumbs
1 c. cooked Quinoa
1/4 c. Parmesan cheese
1 tsp Old Bays Seasoning
Mix all of this up then as you are ready to fry, shape in about 1 tbsp bites and roll in flour. Drop in 1/2 inch of hot grease and fry until golden.
My theory here is that by using the fresh ingredients and delicious healthy quinoa we have totally balanced out the frying part! Right? Totally healthy!
